Breakfast Quesadilla

3-4 ounces of shredded cheddar cheese
2 large eggs, scrambled
2 ounces of ham, cooked and diced
2 (8 inch) flour tortillas
Sour cream and salsa for garnish (optional)

Place shredded cheese, scrambled eggs and ham onto 1 tortilla. Place second tortilla on top and close sandwich.

Potato Breakfast Casserole

3 cups frozen hash brown potatoes (diced or shredded)
1/3 cup chopped green onions
1/4 cup chopped green or red bell pepper
8 slices smoked bacon, cooked and crumbled
2 cups shredded cheddar cheese
3/4 cup milk
1 (8-ounce) can cream-style corn
6 eggs, beaten
1 teaspoon salt
Freshly ground pepper to taste

Country Breakfast Casserole

7 large eggs
2 cups milk
7 slices bread, trimmed and cubed
1 cup fully-cooked diced ham
1/3 cup finely chopped onion
2 cups medium cheddar cheese (grated)
1 teaspoon dry mustard
Sliced tomatoes for topping
Sliced green onions for topping
Beat eggs and add milk, mixing well. Fold in remaining ingredients, except tomato and chives.

Cheese and Sausage Casserole

8 slices white bread, cut into 1-inch cubes
1 pound bulk pork sausage, cooked and crumbled
1 1/2 cups grated cheddar cheese
10 large eggs
2 cups whole milk
2 teaspoons dry mustard
1 teaspoon salt
Freshly ground black pepper to taste

White Lily Light Biscuits

(from the side of the package)
2 cups White Lily Self-Rising Soft Wheat Flour
1/4 cup vegetable shortening
2/3 to 3/4 cup milk
Preheat oven to 500 degrees. Place flour in mixing bowl. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs.
