Baked Potato Soup

Ingredients:

2/3 cup butter
2/3 cup flour
7 cups milk
4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups
4 green onions, thinly sliced
10 to 12 strips bacon, cooked, drained, and crumbled
1 1/4 cups shredded mild cheddar cheese

Weight Watcher’s Irish Stew

Recipe from: Weight Watchers Magazine, March 1994
1 tablespoon vegetable oil
1-1/2 pounds lean boneless lamb, cut into 1-1/2-inch squares 1/2-inch thick (or boneless chuck)

3 cups low sodium chicken broth

Wayne’s Simple Irish Stew

1 head of white cabbage, coarsely shredded
3 Tablespoons of olive oil
2 pounds of either cubed lamb or stew meat
1 pound baby carrots
2 pounds of potatoes, halved, then quartered as above

Wayne’s Idea of Chili

1 can Rotel’s Chilis and Tomatoes (Undrained)
1 (15 ounce) can tomato sauce
1/2 cup chopped Onions
1 (15 ounce) can dark red kidney beans
2 lb. ground beef
chili powder to taste
