Curried Lamb and Lentil Stew

2 tablespoons olive oil
1-1/2 pounds lamb stew meat
2 large onions, chopped
2 large carrots, chopped
6 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon salt
1/2 teaspoon fresh pepper
2 tablespoons curry
1 cup red wine
3 cups beef stock
3 medium potatoes, peeled and chopped into 1/2-inch cubes
1 cup French lentils
