Wayne’s Simple Irish Stew

1 head of white cabbage, coarsely shredded
3 Tablespoons of olive oil
2 pounds of either cubed lamb or stew meat
1 pound baby carrots
2 pounds of potatoes, halved, then quartered as above
2 quarts beef broth
salt and pepper

3 pounds of boneless lamb shoulder, trimmed and cut into 1-inch pieces
1 1/2 Tablespoons minced fresh parsely leaves
1 teaspoon dried thyme, crumbled
6 cups chicken broth
3 pounds boiling potatoes, peeled and quartered
1 large onion, finely chopped

Pot Roast with Gravy and Vegetables

1 roast, 2 to 4 pounds – lean chuck, bottom round, rump, etc
